The Basic: Mozzarella
Mozzarella is the most widely accepted and popular cheese for pizza. It was originally a product of Buffalo’s milk, but is now most often made from the more standard cow’s milk (although other types of dairy animal milks can also be used to make mozzarella, too). There is a difference between mozzarellas and the quality and type of mozzarella used on your Melbourne Pizza can make all the difference in the world. Here is a quick mozzarella primer just for fun:

- Mozzarella is normally divided into two types: low and high moisture, sometimes also referred to as whole and skim.
- Low moisture mozzarella has a moisture content of 50% or lower, while high moisture cheese is above 52%.
- Low moisture mozzarella has a longer storage or shelf life, and so is the cheese most widely available in most grocery stores.
- High moisture mozzarella produces a better consistency for melting, resulting in a creamier cheese, preferable for the best pizza. High moisture mozzarella is more prevalent in the restaurant, pizzeria, and restaurant industry, which is one reason why your delivery pizza may taste so much better than what you can create at home. Basically, the cheeses used in the industry are just plain fresher, and better for it.
More Than Mozzarella
In addition to mozzarella, a number of other cheeses are used in pizza-making, and are growing in popularity as either substitutes for the traditional mozzarella, or more often, in addition to it to produce a unique flavor. Some other cheeses that are popular in pizza-making include parmesan, asiago, ricotta, feta, romano, provolone, and combinations of these and other cheeses. It’s all in good taste, but any way you slice it, cheese is elemental to your pizza experience, so try some new or old combinations on your next pie and create your own favorite flavor.
